Brewing Vibration of Universe Brewing Sacred SAKE 材料 –ingredients - 1.白米 (whiterice) 1500g(1升) ※白米1200g和黒米300g混合使用的话、能够制造出粉色的神酒 *replacing white rice 300g with black rice, Sake will turn pink 2.米曲 (riceKoji) 400g 3.水 (water) 3.6ℓ(2升) ※ 用灵魂之水做更好 * spirit water would be best! 4.「卡塔卡木纳之歌」(reciting KA-TA-KA-MU-NA) 道具 – equipment - 容器(10ℓ带盖子)(10ℓ container with lid) 大的网状过滤器 (large mesh strainer) 蒸器 (steamer) 做法 – instructions - ① 首先在容器中放水,去除钙质。 To pull out the Kalki, pour water into containerin advance.
② 白米用水洗净,浸泡一昼夜。(冬季10~15小時) After washing white rice with water, put it intowater whole day and night. (10~15 hours in winter)
③ 第二天早上,在蒸前30分钟把水去干净了。 Next morning, drain water from rice in a strainersufficiently 30 minutes before steaming.
④ 约30分钟,蒸硬。 Steam hard. (about 30 minutes)
⑤ 容器内放入弄软的米曲,好好混合。 Put rice Koji into a container and mix well.
⑥ 加入蒸好的米,好好混合。 Put steamed rice into the container and mix well.
⑦ 容器盖上盖子,常温放置。 Put a lid on the container and keep in place atroom temperature.
⑧ 3日天、毎天1回、好好混合。 Mix well once in a day for 3 days.
依据温度的不同时间会有差异,冬季的话2周可以出甜味的神酒。 Waiting period varies with temperature. Inwinter, you can drink sweet sacred SAKE in 2 weeks.
使用暖炉以30℃保存的话,、3天可以出辣味的神酒。 If you keep 30℃, for example put it in KOTATSU, you can drinkdry sacred SAKE in 3 days.
⑨ 用过滤网过滤到糟粕。 Filter sake lees with strainer.
⑩ 放到瓶子里冷藏。 Put it in a bottle and refrigerate.
※ 长期保存的情况下,放到塑料瓶子里,为了抑制发酵请冷冻保存。(甜味神酒) If you want to preserve in a long time, put in aplastic bottle and freeze for the purpose of inhibiting fermentation. (sweetsacred SAKE)
※ 在碳酸消失之前,把存在瓶子里的神酒作为香槟饮用。 If you put it in screw cap bottle before loosingcarbonation, you can drink carbonated sacred SAKE. |
